Rick Hall joined the nutrition faculty at Arizona State University in 2002. He received his BS in dietetics from Northern Arizona University and his MS in human nutrition from Arizona State University. He is a registered dietitian with a background in foodservice management and technology. Rick has worked as a school foodservice director and is the past director for the National School Lunch and Breakfast programs for the Arizona Department of Education. Rick has also worked as a freelance nutrition writer for Better Homes and Gardens, Sweat Magazine, and About.com. He has also been featured in the Asian Wall Street Journal, the Journal of the American School Food Service Association, and the Journal of the American Dietetic Association. He is a member of the Arizona and American Dietetic Associations (ADA) and the Sports, Cardiovascular, and Wellness Nutritionists (SCAN) dietetics practice group. Rick recently served a three-year appointed term on the Arizona Governor's Council on Health, Physical Fitness and Sports. He is also an amateur endurance athlete – recently completing his third Ironman triathlon.
Rick is a successful entrepreneur; he and his wife currently own four restaurants in the Phoenix area. In 2007, he was selected by the Phoenix Business Journal as one of the elite “Forty under 40” honorees. Rick is currently completing his PhD in Foodservice and Lodging Management through the Child Nutrition Academy at Iowa State University. His current research focuses on impediments of implementing computer technology for restaurant owners.
